Fennel Relish

This recipe is from Kripalu’s Kitchen and is one of my go-tos for brightening meals, aiding digestion, and preserving that fresh summer flavor.

Ingredients

  • 1 cup shaved fennel

  • 2 tsp fresh lemon juice

  • 1/2 tsp grated lemon zest

  • 1 tbsp extra-virgin olive oil

  • 1/4 tsp fine sea salt

  • Pinch of ground black pepper

Directions

  • Combine everything in a small bowl.

  • Let sit at room temperature for 20 minutes to let flavors mingle.

My Variations

Add basil, parsley, halved cherry tomatoes, chopped hot peppers, dill, even asparagus tips. Spoon over quinoa or lentils, local chicken, local beef, roasted potatoes, or a bowl of blended veggie soup.
